- 6:00 a.m. Check in starts
- 9:00 a.m. Chef’s meeting, turn in boxes will be handed out
- 12:00 p.m. Doors open to public, people’s choice for one bite and best setup begin
- 1:00 p.m. Chicken turn in
- 1:30 p.m. Sauce turn in
- 2:00 p.m. Ribs turn in
- 3:00 p.m. Steak turn in
- 4:00 p.m. People’s choice ends
- 5:00 p.m. Awards
- 8:00 p.m. Show’s over!

Since this is a cooking event on a City of Dallas owned property there are certain requirements:
- 4x8 sheet of plywood. We will provide 1 sheet. This is to be placed under the cookers per the city of Dallas. If 1 sheet won’t be enough you can purchase an additional sheet from us for $15 each or you can bring your own
- Hand washing stations will be provided
- Dish washing stations will be provided
- Fire extinguisher. Must be dated within one year from date
- Food thermometer
- Latex gloves for food prep and serving
- Great attitude - let's have fun!
Food trucks and RV's are prohibited.
All meat must be cooked with wood, charcoal, or pellets. Gas is prohibited.
Beans, sauce, and one bite may be cooked with any kind of grill or smoker. Just remember, all
grills and smokers must be placed on top of plywood sheet.
Generators are welcome. We know they can be noisy so please try to limit yourself to 1 generator per site and bring a long enough extension chord to run the generator behind your setup.
Competition Setup

Setup time will start at 6:00 a.m. Saturday morning. The entry will be at the top of Flagpole Hill. It will be a first come first serve set in. Each
space will be around 20ft X 40ft so this should be big enough for your setup and your vehicle. Upon arrival please have your food accessible for inspection along with a fire extinguisher - this will help streamline the process and get you up and running faster!

The competition and festival will end at 8:00 p.m. You will be expected to leave your space as it was prior to setup set up. There will be plenty of trash cans and hot coal cans provided so PLEASE use them. Awards will be at 5:00 p.m., however you will not be able to drive out until after 8:00 p.m. when the show has ended and guests have vacated. Overnight parking is unavailable.
